SOUS CHEF We're opening a small, ingredient‑driven, off‑grid restaurant and café inspired by Southeast Asian flavours — and we're looking for a capable, self‑sufficient Sous Chef to join us from the ground up. This is a rare opportunity to help shape a new concept built on local produce, bold flavours, and a close‑knit working environment. The Role This is a hands‑on position suited to someone who thrives in a small team and enjoys taking ownership. You'll work across all areas of the kitchen — prep, cooking, service, organisation — and be confident running the kitchen independently when required. For the right person, this role offers a clear pathway to progress into Head Chef as the business grows. Training, mentorship, and development support will be provided for those who want to step into that leadership journey. What You'll Do Lead day‑to‑day kitchen operations alongside the Head Chef Prepare, cook, and plate dishes to a high standard Maintain excellent hygiene, safety, and organisation Manage stock, ordering, and kitchen planning Support and guide junior staff when present Ensure smooth service during busy periods Contribute to menu development and seasonal specials What You Bring Strong experience with Thai, Vietnamese, and/or Korean cuisine Confident knife skills and excellent flavour awareness Ability to work efficiently under pressure A self‑sufficient, problem‑solving mindset Reliability, stamina, and pride in your craft The Environment Our kitchen operates in an indoor-outdoor, off‑grid setting. The role involves physical work, moving equipment and supplies, and adapting to changing weather. You'll need resilience, focus, and the ability to work with both pace and precision.
