About the Role
As a Chef de Partie at Les Rocquettes Hotel, you will play a key role in the kitchen team, working across various sections to deliver high-quality dishes consistently. You will support the Sous Chef and Head Chef in ensuring smooth service, maintaining standards, and training junior team members.
Key Responsibilities
Section Management: Take full responsibility for running your assigned section (larder, sauce, garnish, pastry, etc.), ensuring consistency and quality in every dish.
Preparation & Cooking: Prepare, cook, and present dishes using fresh, seasonal ingredients, following recipes and standards set by the Head Chef.
Menu Contribution: Assist with menu planning and the development of specials, bringing creativity and input to enhance the dining experience.
Service Execution: Work efficiently during service to ensure dishes are prepared to order, correctly plated, and delivered on time.
Food Safety & Hygiene: Maintain the highest standards of kitchen hygiene, organisation, and food safety, ensuring compliance with HACCP and allergen control procedures.
Stock Control: Monitor and manage stock rotation, minimise wastage, and assist with stock orders and deliveries.
Training & Mentoring: Support the development of junior team members, offering guidance, training, and feedback.
Collaboration: Work closely with fellow chefs and front-of-house to ensure smooth service and guest satisfaction.
Banqueting & Events: Contribute to functions, weddings, and events, ensuring high-quality execution for large numbers as well as à la carte service.
Flexibility: Adapt to different kitchen sections and support colleagues as needed.
Requirements
- Previous experience as a CDP or strong experience as a Demi CDP/Commis ready to step up.
- A passion for cooking with fresh, seasonal ingredients.
- Ability to work effectively under pressure in a busy kitchen.
- Good organisational skills and attention to detail.
- Strong knowledge of food safety and kitchen hygiene.
- Team player with a positive and professional attitude.
- Flexibility to work evenings, weekends, and public holidays as required.
